Our food and our chefs are at the heart of everything we do at The Brasserie. Led by our Michelin-starred Group Executive Chef, Stefan Matz, our team’s mission is to create dishes that make the finest of Ireland’s cuisine accessible to all. In creating The Brasserie, our team spent over twelve months researching and collaborating with suppliers, both in Athlone and around Ireland. The result is menus that strive to offer the very best of our island’s meat, fish, and produce, paired with exceptional cocktails.
